Ingridients: 6 each potatoe, large 1/2 teaspoon salt 1 each onion, minced 3 tablespoon vinegar 1/2 teaspoon mustard, prepared 1 teaspoon sugar 2 teaspoon dill seed Preparation: Potatoes should be peeled and quartered. In medium saucepan cook potatoes in boiling salted water until tender. Drain, reserving 3/4 cup of potato water. Dice potatoes. Add oil and minced onion; toss gently. In small saucepan bring the 3/4 cup potato water to a boil; pour over potatoes and onion. Keep at room temperature for 2 to 3 hours. Stir in vinegar, mustard, sugar, and dillseed. Potato salad will be creamy. Serve at room temperature.
Potato soup also comes to mind, but I don't know how delicious that would be cold. Perhaps you could put it in a thermos? I just chop up into chunks 2-3 potatos, some onion, and celery. Add a bit of salt, put water in halfway covering the potatos, and milk the rest of the way (I do recall you do milk, right?). Then add just a touch of butter, and let it boil until the potatos are soft. You can put clams in too for a yummy variation. We put sausage/bacon/ham in, but that's probably not good for you *L*
