Mmmmmmmm- my favourite veggie!!! Do you remember our "vegetable feeds" which always included a good portion of boiled taters, slathered in butter and salt and pepper. Do you have freezing capabilities? If you make things like scalloped taters, tater soups, tater & leek soups, then you could freeze them in smaller portions for use at suppertime, or if you have access to a microwave, nuke them at lunch. It would seem that storage of raw taters would be your biggest problem. Remember, unless they get really wrinkled and hairy and rooty, and shrunken in they can still be used.
